Green Papaya Salad

Mmmmmmm… crunchy green papaya (paw paw) salad. Salty, sweet, sour (and spicy if you’re so inclined). This is definitely one of our favorites for spring. Green papaya is just normal papaya before it is fully ripe. It’s crunchy and a little sour.

Ingredients

4-5 birds eye chilli (optional)
4 small garlic cloves
4 snake beans (or green beans), cut to 3cm lengths
1 tomato, sliced or 5 cherry tomatoes, halved
1 tbsp palm sugar
1 tbsp lime juice
2 tbsp fish sauce (or soy sauce)
200g shredded green papaya
1 tbsp roasted peanuts (crushed)


Preparation

1. Pound the chillies and/or garlic in a mortar and pestle (or dice if you don’t have one)
2. Bruise the beans and tomatoes slightly in the mortar and pestle (or just them a good firm mix in a bowl)
3. Mix lime juice, fish sauce and palm sugar together in a bowl gradually to taste (aiming for a balance between the 3 flavours)
4. Combine all together in a bowl with the shredded green papaya and mix
5. Serve with the roasted peanuts over the top
