My Summer Couscous Recipe

225 gr couscous

1 bunch of fresh parsley /or Dill chopped

1 bunch fresh Coriander chopped

1 small red onion, very finely chopped

1 lemon or lime, zest and juice

½ cucumber de-seeded and finely diced

30 gr sunflower seeds toasted

30 gr sesame seeds toasted

4 tbs olive oil

Salt/ground black pepper to taste

Gluten Free option:

Replace the couscous with quinoa

Prep Steps

  1. Cover the couscous with twice its volume of hot water and leave to soak for 10 minutes.
  2. Slice and dice the parsley, coriander, red onion and cucumber.
  3. Mix together the couscous with all the other ingredients and leave to stand for 30 minutes.

Serve it with grilled fish or chicken.  For a vegetarian option you can add fetta or goat cheese to the salad.
